How to Make Healthy Fresh Spring Rolls (Goi Cuon)!
These light and healthy fresh spring rolls, or Goi Cuon, are delicious and can be made at any time of the year. They are easy to make and perfect for lunches and dinners. The key to a perfect spring roll is to use very fresh herbs and ingredients, like pork, shrimp, herbs, carrots and cucumbers.
Ingredients for Goi Cuon
Rice paper (bánh tráng)
Rice noodles – before using, boil the water and cook the rice noodle for 2 minutes until tender; drain and rinse in cold water
Pork: boil the pork until it is cooked and slice into thin strips
Shrimp: steam, peel and cut in half lengthwise
Lettuce (optional)
Bean sprouts (optional)
Herbs (coriander, mint, basil…)
Carrot: julienned into thin matchsticks
Cucumber: peel and julienne into matchstick-sized pieces
Steps to wrap the spring roll
Place the rice paper on a moistened towel or place rice paper in a warm bowl of water for a few seconds (to soften it). Then place the rice paper on a plate or a cutting board.
Place a small portion of herbs, lettuce, pork, and vegetables on the bottom side of the wrapper closest to you.
Add a small handful of rice noodles.
Wrap the roll until you have 1/3 of the sheet of rice paper left. Add 2-3 shrimp, then pull the sides in and roll the rest of the way.
You will need some practice to roll these wraps successfully, but you’ll get the hang of folding them very quickly!
If you like beef or chicken, feel free to add these to the recipe to customize your spring rolls. You can use any method of cooking that you like, including steaming, grilling, boiling, etc. For a vegetarian version, you can replace pork and shrimp with fried egg or tofu.
Serve your homemade Vietnamese spring rolls with hoisin sauce (peanut sauce) or fish sauce.
